Everyone by now has heard about Sandy, the mass super storm that hit the East Coast last week. I will admit I paid little to no attention to the news before the storm. The newscasters here in MN are well known for being wrong about the weather reports. I figured it was the same.
But then I started seeing posts on my twitter feed and facebook of people without power. And then the flooding and other pictures starting swamping my facebook feed. And I couldn’t turn away from the news. We had so so so minor flooding in our town earlier this spring and witnessing that alone I cannot image. I felt so very helpless in my warm house. I instantly wanted to help, but what can I do? I donated a few things that I had extra around the house and then saw this blogging event. And knew I had to participate.
Comfort food is a standby around here in the winter. Nothing warms the soul more then a warm casserole or hotdish. I wish I could deliver a bunch of these dishes to the hardest hit. So please take a moment today and donate to the Red Cross, and say a prayer for all the people hit by this violent horrible storm.
Wild Rice Casserole (A Carrie’s Sweet Life Original)
- 1 cup uncooked wild rice
- 1lb hamburger
- 1 4oz can mushrooms
- 1 carrot, grated
- 1 can cream of mushroom soup
- 1 cup cheese
- 1 cup beef broth
Prepare wild rice as direction on package.
Preheat oven to 350.
Fry hamburger, add onion and garlic powder to season.
Mix soup, carrot, mushrooms, 1/2 c. cheese, broth and hamburger today. Then stir in wild rice. Pour into casserole dish.
Top with remaining 1/2 cup cheese. Bake for 30 minutes until cheese is melted and bubble. ENJOY

Yum! That looks great. We’d definitely enjoy that in our house!
