Waffles

I am not a huge breakfast person and rarely eat eggs, but I hate to wait til lunch time to eat. Adam asked what I wanted this morning and I couldn’t decide. After a while I thought waffles sounded good. So I suggested it and he was on board :) He even made them.

Waffles(From: Betty Crocker Cookbook New Edition)

  • 2 lg. eggs
  • 2 c. all purpose flour
  • 1 3/4 c. milk
  • 1/2 c. vegetable oil, melted butter or margarine
  • 1 t. sugar
  • 4 t. baking powder
  • 1/2 t. salt

Heat waffle iron.

In large bowl, beat eggs with wire whisk or hand beater until fluffy. Beat in remaining ingredients.

Pour slightly less then 3/4 c. batter onto center of hot waffle iron. Close lid of waffle iron.

Bake about 5 minutes or until steaming stops. Carefully remove waffle. Serve immediately.

I prefer waffles over pancake because waffles are crispy on the outside and pancakes are gooshy. :)
