This recipe comes from a blog… but not a cooking blog. But this recipe is AWESOME! I follow Katie by instagram and she posted an empty casserole dish raving about this recipe. Then she put the recipe on her blog and I knew I had to make it. And it did NOT disappoint!!
Maddy ate almost as much as me, and since she is picky as a bird that was an achievement. There was just a tiny tiny bit left. And her and I fought over the leftovers. I call that success. It also went together really quickly which you know is a must in my kitchen now a days. Try this dish SOON!
Tortellini Pesto Bake (Adapted From: When Hello Means Good-Bye)
- 1 chicken breast sliced thin
- olive oil
- 6-8 fresh mushrooms, sliced
- 4oz. pesto sauce
- 1/4 c. diced onion
- 1 pkg tortellini
- 2 cloves garlic, chopped
- 1/2 cup grated parmesan
Preheat oven to 350.
Place olive oil in a pan, add chicken and cook until mostly cooked through. Add onion, garlic and mushroom. Cook until tender.
Meanwhile cook tortellini according to package directions.
Mix tortellini, meat mix and pesto together. Pour into casserole dish. Top with Parmesan.
Bake for 15 minutes or until cheese is melted.
