7 Layer Salad

Tuesday, August 26th, 2008

I think I have 7 layer salad at almost every potluck I go to but I have never made it myself, I figured this would be a perfect dish to go with my menu for the party. I threw this together the night before leaving off the dressing, cheese and bacon, I topped with that before serving.

Adam and I both LOVED this dressing, I ended up taking a batch to work on Friday, and to Adam’s company picnic on Sunday.

7 Layer Salad (From: Amber’s Delectable Delights)

  • 1 head lettuce or 3 bunches of romaine (chopped into bite size pieces)
  • 3/4 cup carrots, cut into bite size pieces
  • 3/4 cup broccoli, cut into bite size pieces
  • 3/4 cup cauliflower, cut into bite size pieces
  • 1/3 cup bacon, cooked and crumbled
  • 1 cup of your favorite shredded cheese
  • 1/2 cup peas
  • 1/4 cup parmesan cheese

Dressing Ingredients

  • 1 1/2 cups miracle whip (or mayo)
  • 1 tsp white vinegar
  • 1/4 cup milk
  • 1/4 cup sugar
  • 1 tsp garlic powder
  • dash onion powder
  • dash pepper

Combine all dressing ingredients and set aside.

In a 9×13 dish layer the ingredients, 90% of the lettuce, carrots, broccoli and cauliflower, light layer of dressing, remaining 10% of lettuce, remaining dressing, shredded cheese, peas, bacon and parmesan cheese.
Cover salad and put into refrigerator a few hours before serving.

 After the dressing is added.

Tequilaberry Salad

Tuesday, April 29th, 2008

A co-worker brings this salad to almost all of our pot-lucks, I had never had it before, but once I tasted it I fell in love. Lately I have been craving it and have been at a loss for what to bring to work for lunch. So I whipped up this salad and then I can take some each day.

I keep the dressing in a separate container then just add the amount I want and it keeps longer.
Tequilaberry Salad (From: Recipezaar)
  • 2 heads lettuce, chopped (or 2 1-lb bags pre-cut lettuce)
  • 1 head cauliflower, cut up in tiny pieces
  • 1 lb bacon, fried and crumbled
  • 1 cup Hellmann’s mayonnaise (no substitutions)
  • 2 1/2 tablespoons white vinegar
  • 1/4 cup sugar
  • 1-1 1/2 cup parmesan cheese

Combine lettuce, cauliflower and bacon.

Mix mayonnaise, vinegar and sugar.

Add dressing to salad, add parmesan cheese. Serve immediately.

I usually make up the dressing the day before and the rest of the salad and then mix together just before serving.
