I think everyone uses a baking sheet in the month of Dec! This is the same recipe we use every year, but I wanted to post it along with all our baking.</p>
<p style="text-align: left;"><strong>Peanut Butter Blossoms</strong> (From: Better Homes and Gardens New Cook Book)</p>

<li>1/2 c. shortening</li>
<li>1/2 c. peanut butter</li>
<li>1/2 c. sugar</li>
<li>1/2 c. brown sugar</li>
<li>1 t. baking powder</li>
<li>1/8 t. baking soda</li>
<li>1 egg</li>
<li>2 T. milk</li>
<li>1 t. vanilla</li>
<li>1 3/4 c. all-purpose flour</li>
<li>1/4 c. sugar</li>
<li>Herseys Kisses</li>
</ul>
<p>Beat shortening and peanut butter with an electric mix 30 seconds. Add the 1/2 c. sugar, brown sugar, baking powder, and baking soda. Beat until combined, scraping bowl. Beat in egg, milk, and vanilla. Beat in as much flour as you can. Stir in any remaining flour.</p>
<p>Shape dough into 1-inch balls. Roll balls in the 1/4 c. sugar. Place 2 inches apart on an ungreased cookie sheet. Bake in a 350 oven for 10 to 12 minutes or until edges are firm and bottoms are lightly browned. Immediately press a chocolate kiss into each cookie’s center. Transfer to a wire rack and let cool</p>

<li>1 3/4 cups all-purpose flour</li>
<li>3/4 cup unsweetened cocoa powder (not Dutch-process)</li>
<li>1 1/2 teaspoons baking soda</li>
<li>1/2 teaspoon coarse salt</li>
<li>1 tablespoon unsalted butter, softened</li>
<li>1/4 cup vegetable shortening</li>
<li>1/2 cup granulated sugar</li>
<li>1/2 cup packed dark-brown sugar</li>
<li>1 large egg</li>
<li>1 cup whole milk</li>
<li>1 teaspoon pure vanilla extract</li>
</ul>
<p><strong>FOR THE FILLING</strong></p>
<ul>
<li>4 ounces cream cheese, at room temperature</li>
<li>1/2 cup (1 stick) unsalted butter, at room temperature</li>
<li>1/2 cup confectioners&#8217; sugar</li>
<li>1/4 cup canned solid pack pumpkin</li>
<li>Pinch of cinnamon</li>
<li>Pinch of nutmeg</li>
</ul>
<p>Prepare cookies: Preheat oven to 375 degrees. Sift together flour, cocoa powder, baking soda, and salt into a medium bowl; set aside.</p>
<p>Place butter, shortening, and sugars into the bowl of an electric mixer fitted with the paddle attachment. Mix on high speed until smooth, about 3 minutes. Add egg; mix until pale and fluffy, about 2 minutes. Mix in half the flour mixture, then the milk and vanilla. Mix in remaining flour mixture.</p>
<p>Drop about 2 teaspoons dough onto baking sheets lined with parchment paper, spacing 2 inches apart. Bake until cookies spring back when lightly touched, 12 to 14 minutes. Transfer baking sheets to wire racks and let cool 10 minutes. Remove cookies from baking sheets and transfer to wire racks using a spatula; let cool completely.</p>
<p>Prepare filling: In the bowl of a mixer fitted with the paddle attachment, whip together cream cheese, butter and confectioners&#8217; sugar on medium speed until smooth, about 3 minutes. Add pumpkin, cinnamon, and nutmeg; whip until smooth, scraping down the bowl as necessary. For the cherry filled ones I omitted the pumpkin, cinnamon, and nutmeg. In it&#8217;s place I added cherry flavoring, and pink food coloring.</p>
<p>Pipe or spoon about 2 teaspoons filling on the flat sides of half the cookies. Sandwich with remaining cookies, keeping the flat sides down.<br />

<p><span style="color: #000000;">Lightly grease a 9&#8243; x 13&#8243; pan, and drizzle 1 to 2 tablespoons olive oil in the bottom.</span><br />

</span>Combine all of the ingredients, and beat at high speed with an electric mixer for 60 seconds.</p>
<p>Scoop the sticky batter into the prepared pan, cover the pan, and let it rise at room temperature for 60 minutes, till it&#8217;s become puffy.</p>
<p>While the dough is rising, preheat the oven to 375°F.</p>
<p>Gently poke the dough all over with your index finger.</p>
<p>Drizzle it lightly with olive oil, and sprinkle with pizza seasoning, and/or the dried herbs of your choice, if desired.</p>

<div>Preheat oven to 350 degrees. Line a baking sheet with parchment paper; set aside. In a small bowl, combine zest with 1 tablespoon sugar; set aside. In a medium bowl, whisk together both flours, baking powder, and salt; set aside.</div>
<div>In the bowl of an electric mixer fitted with the paddle attachment, beat butter and remaining sugar on medium-high speed until light and fluffy, about 2 minutes, scraping down sides of bowl as needed. Add egg yolks, and beat until combined, scraping down sides of bowl as needed. Beat in reserved zest-sugar mixture. Add flour mixture in two batches, alternating with the juice, and beat to combine.</div>
<div>Turn out dough onto a piece of plastic wrap, and shape into a 1-inch-thick disk. Wrap in plastic, and refrigerate until firm, about 30 minutes.</div>

<div>On a lightly floured work surface, roll out disk to 1/8 inch thick using a lightly floured rolling pin. Using a lightly floured 2-inch round cookie cutter, cut out rounds and place about 1 inch apart on prepared sheet. Bake, rotating sheet halfway through, until edges are golden, 18 to 20 minutes. Transfer sheet to a wire rack to cool 5 minutes. Transfer parchment paper and cookies to rack to cool completely.</div>

<div>Using an offset spatula, spread 1 tablespoon filling onto flat sides of half the cookies. Sandwich with remaining cookies, keeping flat sides down. Once filled, cookies can be kept in an airtight container in the refrigerator for up to 3 days.</div>

			<content:encoded><![CDATA[<p></p><p>I participated in this round of the WC Recipe Exchange. I have been a horrible procrastinator and finally got around to making my soup today.</p>
<p>Sadly Adam doesn&#8217;t like squash so I most likely wouldn&#8217;t make this again, but it was very good for me and I liked the texture the beans gave to it. Sadly my camera batteries died as I turned it on to take a picture of the soup, so no pictures this round <img src='http://www.carriessweetlife.com/wp-includes/images/smilies/icon_sad.gif' alt=':(' class='wp-smiley' /> </p>

<p><strong>Butternut Squash Soup</strong></p>
<ul>
<li>2 squash, chopped into 1&#8243; chunks</li>
<li>1 onion, chopped</li>
<li>1 celery stalk, chopped</li>
<li>4-6 c. chicken broth</li>
<li>2 cans Goya pink beans, rinsed and drained</li>
</ul>
<p>Sauté onion and celery until starting to brown.</p>
<p>Add chopped squash and sauté until squash is browning. Add approximately 4-6 cups of chicken broth, just enough to cover.</p>
<p>Keep on lowest heat possible and simmer for approximately 1 hour; add beans and cook for about 5 more minutes.</p>
<p>Add salt and pepper to taste.</p>

I was so happy to see that this month was the scoop, I have recently bought the medium and large Pampered Chef scoops, and hope to buy the small soon.</p>

<li>3/4 cup packed light brown sugar</li>
<li>1/2 cup granulated sugar</li>
<li>1 tsp vanilla extract</li>
<li>2 eggs</li>
<li>1 1/3 cups M&amp;M’s, divided</li>
<li>1 cup chopped pecans (I omitted)</li>
</ul>
<p>Heat oven to 350 degrees. Stir together flour, baking soda and salt; set aside. Beat butter, brown sugar, granulated sugar and vanilla in a large bowl until well blended. Add eggs; beat well. Gradually add flour mixture, beating until well blended. Stir in 3/4 cup M&amp;Ms and all the nuts. Drop by rounded teaspoons onto cookie sheet. Press 5-6 of remaining M&amp;Ms on each cookie before baking.</p>
<p>Bake 9-11 minutes or until lightly browned. Cool slightly; remove from cookie sheet to wire rack. Cool completely. Yields about 3-3 1/2 dozen cookies.</p>
