Taco Stack

I am part of the Foodbuzz community and also a member of the Tastemaker program. They gave me the opportunity to try Pace Salsa. Neither Adam nor I are big spice people and aren’t big salsa eaters. But my favorite dishes are Mexican so I often use salsa in them. So I was excited for a reason to make some Mexican food.

My girlfriend is well known for her taco stack. Adam has never gotten to have it so I decided to give it a whirl. This was delicious and kind of like a taco lasagna without the noodles.

Taco Stack (From: Myself)

  • 1 lb ground beef
  • 1 pkg. taco seasoning
  • 1 jar Pace salsa
  • 1 bag (2 cups) cheese of choice
  • 1 cup corn
  • 1 can refried beans
  • 1/4 cup queso
  • 6-8 flour tortillas

Fry ground beef, drain fat and mix in taco seasoning and water (amount on back of package).

Spray baking sheet with non-stick spray. Lay a tortilla on top.

Layer remaining ingredients as desired.  Ending with a tortilla, salsa and cheese.

This looks delicious. I could totally go for your taco stack.

Yummy looking! There are lots of versions of this that can be made. Try corn tortillas, use cooked & diced chicken, green chili, co-jack or pepperjack cheese, pinto beans (drained & rinsed). Roast, seed, peel & dice some fresh anaheim or poblano peppers. Garnsh with sour cream and a small side of pace.
