Adam doesn’t like mexican food, when he does eat mexican food he often opts for fish or shrimp tacos. So when I saw these pop up in my reader I knew I should make them. I have been eating more shrimp lately and it would make him happy.
I personally was not a fan of the shrimp, but it was more because of the seafood. Adam loved them! But the sauce… oh the sauce is out of this world! I ended up making a chicken taco and put a bunch of sauce on because it is delicious. I will be serving the sauce instead of regular sou cream with all tacos now. If your a fish/shrimp taco fan you wont be disappointed in the shrimp either, if not opt for chicken or beef.
Shrimp Tacos (From: Taste of Home Cooking, Originally From: Heather)
- 1lb shrimp, peeled and deveined
- 2 T. Olive oil
- Juice of half a lime
- 2 cloves Chopped garlic or garlic powder
- 1 T. Chili powder or cayenne pepper
- 1 can chopped green chilies or 1 jalapeno, roasted, peeled and seeded
- 1 packet ranch dressing mix
- 1 cup sour cream
- Flour tortillas
- Shredded lettuce
- Diced tomatoes
- Shredded Monterey Jack cheese
- Your favorite hot sauce
Combine shrimp, olive oil, lime juice, garlic and chili/cayenne in a bowl. Marinate shrimp for up to 30 minutes. Cook shrimp on grill.
Meanwhile, combine chilies/jalapeno with ranch dressing and sour cream in a food processor and blend until smooth. Warm the tortillas while the shrimp are cooking.
To assemble: smear some sauce on a tortilla, then top with shrimp, shredded lettuce, tomatoes and cheese. Drizzle with extra sauce and a few drops of hot sauce.

Carrie, sometimes I don’t know what to do with you! Here I was thinking I liked Adam, because he likes pumpkin pie, but then he goes and ruins it by disliking Mexican food! I think you should run away and come, have a Mexican feast with me. We’ll send you home before dessert!
It’s not that I dislike mexican food, I just don’t want to eat it 4 days of the week like Carrie does. : ) Once a week or so for tacos or anything works just fine for me. I can say these were really good to. I could have cooked the shrimp a little longer, the grill was running kind of cold for some reason. Otherwise the sauce itself I liked. I think it could do with a little more flavor for some or some more heat but otherwise it can really be used on a lot. Great meal.
