Pumpkin Brownies

I don’t like pumpkin, I love baking and I love the smell of it, but don’t like the flavor, Adam loves it so I am pretty good making it. Now that it is fall I keep thinking about pumpkin and apples. We are going apple picking in the coming weeks but for now pumpkin will do.

I was at Wal-mart a few weeks ago and bought the Hersheys pumpkin spice kisses, My mom and Adam both had one and were like their different. So I knew I would need to bake with them for them to get eaten. I plan to make cookies in the coming days.

 Adam really enjoyed these, he said they had the perfect pumpkin flavor.

Rich Chocolate Brownies (From: Myself Inspired From: Better Homes and Garden Baking Book)

  • 1 c. sugar
  • 2 eggs
  • 1/2 t. vanilla extract
  • 1/2 c. butter, melted
  • 1 T. pumpkin pie spice
  • 1/2 c. baking cocoa
  • 1/4 t. baking powder
  • 12  pumpkin spice kisses, chopped
  • 1/4 c. mini-chocolate chips.
In large mixing bowl, beat the sugar, eggs and vanilla. Add butter;mix well. Combine the flour, cocoa, and baking powder; add to batter and mix well. Mix in kisses and chips.

Pour into a greased 8-in square baking pan. Bake at 350 for 25-30 minutes or until a toothpick inserted near the center comes out clean cool on wire rack.

Pumpkin Frosting (From: Myself)
  • 1/4 c. pumpkin
  • 2 T. melted butter
  • 2 c. powdered sugar
  • 1/2 t. pumpkin pie spice
  • 1/2 t. nutmeg
  • 1/2 t. cinnamon
Cream all together to get desired consistancy and then spread on brownies and enjoy.
