I have made a few stuffed shells in my time. But these, they beat all the other ones by a million. I actually made manicotti but doubled the recipe and ended up with a ton of filling so I bought some shells which I stuffed and froze… but we only waited like a week because they were SO good! These are seriously a favorite lately. Even getting picky Maddy ate 2 whole shells.
Pesto Mushroom Stuffed Shells (From: Carrie’s Sweet Life Original Creation)
- 1 box large shells or manicotti, prepared as directed on box
- 4oz cream cheese, room temp
- 1pkg mushrooms, washed and chopped
- 4T Pesto
- 1 egg
- 1 cup mozzarella
- 1 jar marinara sauce
Preheat oven to 350.
Saute mushrooms until cooked through.
Pour half of marinara across bottom of a 9×13 pan.
Mix cream cheese, pesto, mushrooms, egg and 3/4 cup mozzarella. Stuff shells or manicotti. Lay on top of marinara.
Top with remaining marinara and remaining cheese.
Bake until heated through 30ish minutes.

Looks great! My Husband loves pasta but pregnancy has given me quite an aversion to most pasta dishes, especially ones that are a little on the mushier side. I bet these would be great because shells hold their shape really well.
I’ll definitely be adding this to my list of freezer meals to make!
I know my guy wouldn’t turn down anything with pesto in it!
