I am the host of What’s Baking this month, and I choose the theme Peppermint. Since I don’t use this often I knew it would help me be creative. And my husband the peppermint lover could enjoy my creation. Well before I knew it time was getting away and I had to think fast, so I didn’t get as creative as I wanted but these were good. I took a basic cookie dough recipe, subbed peppermint and then added in red and green chocolate chips.

Peppermint Chocolate Chip Bars (Adapted From: Food Network)
- 3/4 cup Crisco Butter Shortening
- 1 1/4 cups firmly packed light brown sugar
- 2 tbsps. milk
- 1/2 tbsp. peppermint extract
- 1 large egg
- 1 3/4 cups Pillsbury All Purpose Flour
- 3/4 tsp. baking soda
- 1 (12 oz.) pkg. semi-sweet chocolate chips (I used a bag with red, green and regular)
Heat oven to 375 degrees F.
Combine shortening, brown sugar, milk and peppermint in large bowl. Beat until well blended. Beat in eggs
Combine flour, salt and baking soda. Mix into shortening mixture until just blended. Stir in chocolate chips.
Pour into 9X13 inch pan. Spread until even.
Bake for 19-21 minutes our until toothpick inserted comes out clean.
Cool completely then slice and enjoy.
