My dear friend Amy is expecting her little baby girl any day now. As soon as she told me she was expecting I asked to throw her a shower. She agreed, I then asked her her theme and she said freezeable items or make ahead… aka baby friendly.
Before I had Hanna I made 2-3 kinds of cookie dough and froze it, it was the perfect treat to pop in the oven and bake a cookie or two… or have a little dough ball of unbaked.
In a medium bowl, cream the butter, white sugar, brown sugar, and peanut butter together. Stir in the egg and vanilla. Sift together the flour, baking soda and salt; stir into the creamed mixture.
Drop by tablespoonfuls into the cups of a muffin tin. Cups should be about 1/4 full. Bake for 8 to 10 minutes, until lightly browned. Remove from oven and immediately press a peanut butter cup into the center of each cookie. Allow the cookies to cool completely before removing from their pan.
I keep seeing these cute little cookie cups popping up and have not made them myself yet. The PB cup would be my first choice, but I can see the possibilities are endless as far as fillings.
