Cream Cheese Chicken

We do a weekly meal with friends of ours, where one week we go to their house, and one week they come to our house. It was our turn last night. So I decided to try the famous nest recipe of Cream Cheese Chicken. It was REALLY good!!!! I didn’t get the best pictures as we were really hungry and already chowing but you get the idea.
Cream Cheese Chicken (From Nestie MaryEllen)

Ingredients
- 3 chicken breasts, trimmed and kept whole or cut into strips or chunks
- 1 can chicken broth, separated
- 4-8 cloves garlic
- red pepper flakes
- 4 oz cream cheese
- 1.5 tbs flour
- 2 tsp white wine
Optional: chopped red and green peppers or 1 chopped jalapeno

Directions
- Put chicken in large pan with a little bit of olive oil
- Add red pepper flakes and pressed garlic
- After 1-2 min, add ¾ can chicken broth and white wine; add the chopped peppers at this time if you are using them
- Bring to a boil then simmer 20-25 min until chicken is cooked
- Remove chicken and place in a covered dish; keep warm
- Mix flour with remaining broth and add to pan; mix
- Add cream cheese, mix until thick and bubbly

I tripled this sauce and we had no leftover it was WONDERFUL, so I would definitely double the sauce depending how saucy you like it. I also served this over egg noodles which was wonderful, some people enjoy it over rice but I don’t care for rice. Really whatever you prefer. I also cooked the whole chicken breasts next time I would cut them in strips, everyone cut there chicken anyway would of saved some time. I highly suggest trying this recipe!!!

For dessert Rick my girlfriends fiancee loves Apple Crisp, so I made an apple pie, but it is kind of a mix of Apple Pie, and Apple Crisp. We finished off a whole pie last night just the four of us. It is awesome with some ice cream. Again didn’t get the best picture got too busy eating!

Dutch Settlers Apple Pie (From: Cathy, My Mother-In-Law)

Ingredients:

2 cans of apples

1 (8oz) sour cream

1 egg

1 t. vanilla

2Tb. Flour

pinch of salt

1/2 c. sugar or brown sugar

2 graham crackers pie crusts

Topping

1/2 c. flour

1/2 sugar

2 Tb. Butter

1 T. Cinnamon

Mix all ingredients except topping bake in preheated 450 oven for 20 min, then lower oven to 350 and bake another 20 minutes. Top with the topping and bake another 20 minutes, cool and enjoy.

This recipe makes two pies. My mother-in-law thinks it tastes better after it is cold or the next day. I prefer to eat it after sitting for about an hour. Serve with vanilla ice cream!!!!

Meatloaf Dinner

Tonight I made a wonderful meatloaf dinner for dinner. We had meatloaf, fried potatoes with mushrooms, and corn cake. It was wonderful!

For the potatoes I just used cut up potatos fried them in a pan with oil and mushrooms, added some seasoning salt, and salt and pepper. Tasty!

The Corn cakes is actually a package you buy at a grocery store. It is Chi-Chi’s brand sold in the mexican section. It’s really good with mexican food but also really good with any meal. You just add cream corn, butter, and water and bake!

For the meatloaf, this is a recipe I got off Kraft many months ago, and has become Adam’s favorite meatloaf. Even if you don’t love meatloaf try this. When I met Adam he told me he really didn’t care for it but would eat it. This recipe he requests all the time.

Meatloaf (from Kraft Foods)

2lbs ground beef

1 pkgs Stove Top Stuffing (recipes calls for chicken we prefer mushroom and onion)

1 cup water

2 eggs, beaten

Mix all ingredients together put into loaf pan. Then you can use BBQ sauce or we prefer about 1/4 c ketchup, and 1/4 brown sugar mixed together on top. Bake in a preheated 375 oven from 1 hr, and 15 min or until cooked through.

Homemade Pretzels

I use to look forward to having to go to Target to go shopping because they had the best pretzels with cheese. But a few months ago I found out they didn’t have the cheese anymore. I was really sad, and miss my pretzels. Well there was a recipe for homemade pretzels on the nest this week so this even Adam and I decied to attempt to make them. They are WONDERFUL!!! We bought some chedder cheese. And are soft and just wonderful, and really easy to make!

The recipe:

Depending on the size of the pretzels you make this recipe will make 9-12 shaped pretzels.

Ingredients:
1 tsp dry yeast
2 tbls and 2 tsp brown sugar
2+ cups flour coarse
kosher salt
baking soda
shortening or butter

Directions:
1) In large mixing bowl mix 1 tbls HOT water and 1 tsp yeast. Mix until yeast dissolves completely.
2) Stir in 2/3 cup WARM water.
3) Stir in 2 tbls and 2 tsp brown sugar.
4) Slowly add 2 cups flour, stirring constantly. Contuine stirring until the mixture is smooth and does not stick to the sides of the bowl.
5) Lightly flour counter. Dip your hands into extra flour. Knead the dough until it is stretchy and smooth. (Push it down and away from you with the palms of your hands, turning the dough as you work)
6) Grease cookie sheet(s) well with butter or shortening. Sprinkle greased cookie sheet(s) with kosher salt. Preheat oven to 475.
7) Using liquid measuring cup fill a large saucepan at least 1/2 full of water. For each 1 cup of water, add 1 tbls baking soda.
8) Divide the dough into 16 equal sized pieces.
9) Using the following 4 steps shape each dough ball into a pretzel shape…

1)Roll the dough into a rope 14″ long and as thick as your thumb. (if you are having trouble rolling out the dough, slightly wet your hands and try agian) Bend the dough into a U shape.
2) Cross one end of the rope over the other one. The ropes should cross about three inches from the tips.
3) Twist the crossed ends, making a full turn. Fold the ends back, towards the middle of the U.
4) Open the ends slightly to form a pretzel shape. Press the ends into the dough firmly.

10) Bring water into saucepan to a gentle boil (not to many bubbles)
11) Use pancake turner to lower each pretzel into the saucepan. Count slowly to 30. Then lift the pretzel onto the greased and salted cookie sheet (shaking off excess water back into the saucepan). Repeat until all the pretzels are done.
12) Sprinkle some kosher salt on top of the pretzels and put them in preheated oven. Bake for 8 minutes or until the pretzels are golden.

A Warm Minnesota Supper

Tonight for dinner, Adam had requested Wild Rice soup, and I figured I would make a special warm dessert to go with it since he worked out in the cold and the wind today.

The soup was Ham Wild Rice Soup. It is so rich and creamy and tasty. The recipe is from my mom she found it and gave me and is a wonderful recipe. I always use Ham but you can use chicken instead, and you can add celery too if you like that. I prefer to serve it with some fresh bread and butter.
Wild Rice Soup
6 Tbsp. butter
1 Tbsp. minced onion
1/2 c. flour
2 (14 1/2 oz.) cans chicken broth
2 c. cooked wild rice
1/2 c. finely grated carrots
1/3 c. minced ham or 1/2 c. cooked chicken
1 1/2 Tbsp. chopped silvered almonds
1 c. half and half
1/2 tsp. salt
Snipped parsely or chives for garnish
1) In a large saucepan, melt butter and saute onion until tender. Blend in flour and then gradually add broth. Cook, stirring constantly, until mixture comes to a boil and boil for 1 minute.

2) Stir in wild rice, carrots, ham (or chicken), almonds, and salt. Simmer about 5 minutes, blend in half and half and heat to serving temperature. If too thick, you may thin with chicken broth.

3) Garnish with snipped parslely or chives.

For dessert I found a recipe for bread pudding, I have never had homemade bread pudding but tried it tonight it was wonderful. I also made Vanilla sauce to top it with, the sauce didn’t thicken all the way, but I don’t think I boiled it long enough.

Bread Puddding (from allrecipes.com)

INGREDIENTS
6 slices day-old bread
2 tablespoons butter, melted
1/2 cup raisins (optional)
4 eggs, beaten
2 cups milk
3/4 cup white sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).

Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.

In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.

Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

Vanilla sauce (from allrecipes.com)

INGREDIENTS
1 cup white sugar
1 tablespoon cornstarch
2 cups water
1/4 cup butter
2 teaspoons vanilla extract
DIRECTIONS
In a saucepan, combine the sugar and cornstarch. Whisk in the water, stirring until blended. Bring mixture to a boil and continue to cook for 1 minute, stirring constantly. Remove from heat and mix in the butter and vanilla. Serve warm.

Valentines Dinner

Our Menu:

T-Bone Steaks with Bacon Mushroom Sauce from Kraft Kitchens

5 slices Bacon, cut into 1/4-inch pieces
1 pkg. (8 oz.) fresh mushrooms, sliced
1/4 cup A.1. Original Steak Sauce
1/4 cup dry sherry or water
1 tsp. brown sugar
2 beef T-bone steaks (about 8 oz. each), 1 inch thick

COOK bacon in large skillet on medium heat until crisp. Remove bacon from skillet, reserving 2 Tbsp. of the drippings in skillet. Place bacon on paper towels to drain.
ADD mushrooms to drippings in skillet; cook 5 minutes or until tender, stirring occasionally. Add bacon, steak sauce, sherry and sugar; mix well. Bring to boil. Reduce heat to medium-low; simmer 5 minutes. Cover to keep warm.
GRILL or broil steaks 14 to 16 minutes for medium-rare to medium doneness, turning occasionally. Serve topped with mushroom sauce.



Baby Red Garlic Mashed Potatoes (Courtesy of Nesties)

6-10 Baby Red Potatoes
4-6 gloves of Garlic
1/2 stick of butter
1 8oz of cream cheese
1 8oz sour cream

Boil potatoes and garlic until potatoes are done. Drain and put back in pot, add butter, sour cream, cream cheese, dash of milk, and salt and pepper to taste.

The meal was WONDERFUL! I will be making the Bacon Mushroom sauce most likely all the time we cook steak. It was so much flavor. We did use the Maple Bacon because thats what he had on hand! It was really really good. The potatoes were good but not something I would write home about. I will try modifying that recipe next time and see what we get

The coconut cake was very good as well! Adam ate his whole piece and he isn’t a coconut lover! Definatly a recipe to try!
