Maddy recently started dance lessons, this is great for her. But the class is from 5:15-5:45… dinner time as we normally eat around 5:30 and if I push it til 6 I have some crabby children
So I have been making great use of my crockpot on these nights. I try to find recipes that we can get home and eat it’s done. This was on I found on pinterest. The originally recipe had no mushrooms, or meat. I added it. I thought the tortellini was a bit overcooked so I have changed the directions how I will do it next time.
And there will be a next time. This was DELICIOUS! Perfect for those cold winter nights.
Mushroom, Spinach, Tortellini Stew (Inspired From: Healthy Snack Recipes, Cassie Craves)
- 1 bag fresh baby spinach
- 1 pkg mushrooms, rinsed and drained
- 1 bag cheese tortellini
- 1 block cream cheese, diced in chunks
- 1 lb. kilebasa, sliced
- 1 can (14.5oz) basil and garlic diced tomatoes
- 1 can (14.5 oz) fire roasted tomatoes
- 4 c. chicken broth
Pour spinach, tomatoes, kielbasa, and chicken broth in crockpot. Cook on low for 3 hours.
Add tortellini, and cream cheese. Cook on low for 2ish hours or until ready to serve.
