I have seen lasagna roll-ups all over the place. I am a sucker for lasagna so why wouldn’t I love these. Although we did like them I felt like they were more work then just regular lasagna. Having to roll each one was a little tedious. Where as with lasagna you throw and go.
But it was still delicious.
Lasagna Roll-Ups (Inspired From: Online, Created By: Me)
- 2 cups spaghetti sauce
- 2 cups cottage cheese
- 1/2 cup Parmesan cheese
- 1 egg, lightly beaten
- 1 1/2 cup mozzarella
- lasagna noodles, cooked and drained (cooled enough to touch)
Preheat oven to 375.
In a large bowl add cottage cheese, Parmesan, egg and 1 cup of mozzarella. Puree with an immersion blender until no chunks remain. You could use ricotta but I do not like the flavor.
Pour 1 cup of spaghetti sauce in a baking dish. Spoon into each noodle and roll the noodles up. Place seam side down on-top of sauce in baking dish. Repeat with remaining noodles.
Pour remaining sauce over the noodles and top with remaining 1/2 cup mozzarella.
Cover with foil and bake for 30 minutes, remove foil and bake for 5-10 more minutes until brown and heated through. Let sit for 5-10 minutes and then serve.
