Fall Popcorn Snack Mix

by Carrie on October 25, 2015

This poor old blog has fallen by the wayside, mainly for 2 reasons life is busy with 2 kids and a pregnancy that is kicking my butt. And also I felt too stressed about my lack of “good” pictures. But lately we have had a bunch of new recipes that have become family favorites and I want them here on this old blog to keep track of. That is why I started this blog and I’m going back to that. So I hope to be around a lot more, the pictures wont be awesome but the food will be beyond delicious!

This recipe popped up on my Facebook the day before we were going to friends for a game night… I had candy corn, peanuts, and the popcorn. Meant to be, we changed up the recipe and made homemade kettle corn instead of the caramel corn like the directions said. This is like crack popcorn, perfect for fall or Halloween!

Fall Popcorn Snack Mix (Inspired from: Mandy’s Recipe Box)

  • 1 cup popcorn kernels
  • 1/2 c. sugar
  • 1/2 c. oil
  • 1 cup each honey roasted peanuts, candy corn, Reese’s Minis and mini marshmallows
  • 1┬ácup caramel bits
  • 2 Tbsp. heavy cream
  • 1 cup milk chocolate chips
Heat the oil in a large pan when hot add popcorn kernels and sugar cover and shake and until all kernels pop. Spread unto a large sheet of wax paper to cool, take out bad hulls or unpopped kernels.
Spread the candy, peanuts, and marshmallows over popcorn
Melt caramels and cream for 1 minute, stir and heat at 20 second intervals until melted completely. Drizzle over popcorn.
Melt chocolate chips in a bowl. Drizzle over popcorn.
Let set/cool.
Break apart and enjoy!!
