I knew I wanted to bring cookies with us this weekend, but didn’t have to go to the store. I had a few random bags of chips in the cupboard so I made some monster cookies and cleaned out all my bags
I doubled this recipe. And used more vanilla extract then the recipe called for. These cookies are great little treats, they baked up perfect, I tried the dough which was yummy, but haven’t tried one, I will post back my review after the weekend.
Just Chocolate Chip Cookies (From Bakingblonde)
- 1/2 stick butter, softened
- 1/4 cup sugar
- 1/2 cup packed brown sugar
- 1 1/2 teaspoons vanilla extract
- 1 egg
- 1 1/8 cups flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup chocolate chips (I used about 3 c. total of monster cookie chip mix, white chocolate, and toffee)
- 1 cup walnuts or pecans (I omitted)
Preheat the oven to 375 degrees.
In a mixing bowl cream together butter and sugars. Add the vanilla and egg until well combined (scraping bowl as needed to evenly combine ingredients)
In a small bowl, whisk together the flour, salt and baking soda. Add the flour mixture to the batter and mix on low speed just until absorbed. Fold in the chocolate chips (and nuts if using).
Using a medium scooper or a spoon, drop balls of dough onto a parchment lined baking sheet.
Bake for 8-12 minutes, or until edges are golden.
Allow to cool on sheet for 5 minutes to set. Transfer to wire racks to cool completely.
Store in airtight container.
