Crispy Yogurt Chicken

I saw this recipe on Pioneer Womans blog right after we made our yogurt chicken, it looked yummy and we enjoyed the last one so much that I figured we might as well try it again.

I used her yogurt recipe but marinated all day then coated and baked. We really liked the crispness of this recipe, but liked the mint better from the other recipe, so I want to try this again and use the mint instead 🙂

Crispy Yogurt Chicken (From: Pioneer Woman)

  • Chicken legs
  • 2 c. plain, unflavored yogurt
  • 2-3 gloves garlic
  • Parsley
  • Juice of one lemon
  • Salt (I used seasoning salt)
  • Butter
  • 2 c. Panko Bread Crums

Begin by pouring 2 cups of plain yogurt into a mixint bowl. Peel and mince a couple of cloves of garlic and add them to the yogurt. next chop up a small amount of fresh parslet and add it to the yogurt as well. To this add the juice of one lemon. Mix together to combine.

Rinse your chicken and pat it dry. Then give it a nice sprinkling of salt.

In another bowl placethe bread crumbs. Give them a sprinkling of salt too and then a bit of a stir.

Butter a baking dish. With a pair of tongs place the chicken, one piece at a time into the yogurt mixture. Turn it over throughly to coat. Then roll the chicken in the Panko bread crumbs. Cover each piece throughly with bread crumbs and place in the baking dish.

Finally, place a slice of butter over the large part of each chicken piece. Cover with foil and bake in a 350 oven for 1 to 1 1/4 hours, removing the foil for the last 15 minutes of cooking. When the chicken is nice and golden, rmove from the oven and enjoy!
