Adam is a big fan of chex mix. It’s his favorite treat. I am not for the tradition chex mix I like the sweet versions. This was a combo of 2 recipes I found and just went with what I liked/didn’t like.
Excellent sweet/savory snack.
Chocolate Caramel Chex Mix (Adapted From: Chex)
- 2 cups popcorn
- 3 cups Corn Chex cereal
- 3 cups Rice Chex cereal
- 1/2 cup mixed nuts
- 1/2 cup butter or margarine, cut up
- 3/4 cup packed brown sugar
- 1/4 cup light corn syrup
- 1 cup chocolate chips
In 2-cup microwavable measuring cup, microwave butter, brown sugar and corn syrup uncovered on High about 1 minute 30 seconds, stirring after 1 minute, until mixture is boiling.
Pour over cereal mixture, stirring until evenly coated. Microwave uncovered on High about 5 minutes, stirring and scraping bowl after every minute, until cereal just begins to turn brown. Spread on waxed paper or foil to cool, about 15 minutes, stirring occasionally to break up.
In medium microwavable bowl, microwave baking chips uncovered on High 1 minute to 1 minute 30 seconds, stirring every 30 seconds, until melted and smooth.
Pour chocolate over caramel mixture. Cool on wax paper for 30ish minutes or until it’s set.
