Adam can cook, but often with his schedule he doesn’t and it doesn’t normally happen on the weekend for whatever reason. But this Sunday we had no plans and I was not in the mood to cook. So I simply said “There is 2 chicken breasts in the fridge, I don’t want pasta, or plain fried/grilled chicken. The rest is yours to take care of.”
He did amazing, he asked me what we had I said we had rice, potatoes or couscous as a side. He googled and found this recipe. I will admit when he told me what he was making I was skeptical but I wasn’t about to say anything as he was cooking. I am SO glad I didn’t this was AMAZING! The flavors were great. You could use any veggies you like/want.
Chicken and Couscous skillet dinner (Adapted From: Kevin and Amanda)
- 2 tablespoons olive oil
- 1 cups diced onion
- 2 cups diced carrots
- 1cups diced celery
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 cloves garlic, minced
- 1 1/3 cups Couscous
- 2 cups chicken broth
- 2 cups chopped chicken
In a large skillet, heat olive oil over medium high heat. Add onion, carrots, and celery, chicken, season with salt and pepper, and saute for 5-10 minutes until softened and caramelized.
Add garlic and stir to combine until fragrant, about 30 seconds. Add couscous and broth, stir to combine, then cover, reduce heat to low, and simmer for 8-10 minutes until broth is absorbed.
Add chicken and stir until heated through. Enjoy!
