Black Bean Brownies

by Carrie on July 16, 2011

Brownies are my least favorite dessert, that being the case I am not sure why these jumped out at me, especially because I am not a big black bean fan. But these were a hit with black bean lovers, brownie lovers, and haters of both. These were SO simple to make really really delicious. If you didn’t know you would never know what is in them. They are soft, chewy and fall apart when you cut or touch them, but ohhh so delicious.

Fudgy Black Bean Brownies (From: Pennies On A Platter, Originally From: Meal Makeover Moms)

1 (15-oz) can black beans, drained and rinsed very well
3 large eggs
3 tablespoons canola oil
3/4 cup sugar
1/2 cup unsweetened cocoa powder
1 teaspoon vanilla
1/2 teaspoon baking powder
Pinch of salt
1 cup semi-sweet chocolate chips, divided

Preheat oven to 350˚F.  Grease an 8-x 8-inch baking pan; set aside.

Process the black beans in the bowl of a food processor until smooth.  Add the rest of the ingredients, minus the chocolate chips and process again until smooth.  Mix in 1/2 cup of the chocolate chips and pulse a few times just until the chips are incorporated.

Pour the batter into the prepared pan and smooth with a rubber spatula or wooden spoon.  Sprinkle with the remaining 1/2 cup chocolate chips.

Bake for 30 to 35 minutes, or until the edges start to pull away from the sides and it passes the toothpick test.  Cool completely in the pan, then slice into squares.

SO funny that even though you do not like brownies nor black beans, you went ahead and made these anyway. 🙂 Glad they were a success for you!

I’ve always been a little skeptical of these brownies, espeically because I do not like black beans either. Maybe I just need to step it up and make these! 🙂

Tried black bean brownies at a friends house the other day for the first time. I’m not sure what recipe she used but they were surprisingly tasty. She had me try them before telling me what was in them. I’m not looking up more dessert recipes using beans in place of flour. Such a great substitution! Thanks for the recipe.

My grandson had to make a healthy food for health class. we made these ,no one knew they were made with Black Beans. they ate them all……so I have been making them for my family and friends. And they can NOT beleive that they are black beans . I have been sharing the recipe with so many others. They are a great way to get in some extra fiber…love them and no flour….. And I did try other recipes but like this one the best.. and an other great thing they are all made in the food processor!!!
