I’m a huge fan of biscuits and gravy. It’s not very often you find it on a menu up here, but when I do I always order it. Last week I got a sudden craving and added it to our menu… but wasn’t sure what recipe I would use. I randomly found this one and adapted it to what we had on hand… it was perfect and AMAZING! Hand’s down best recipe I have made, there will be no more searching this will be it!
Biscuits and Gravy (Adapted From: Mama’s Southern Cooking)
- 1 pound fresh sausage
- 3 tablespoons shortening, or bacon drippings
- 1/4 cup all-purpose flour
- 2 cups half and half
- 1 cup heavy cream
- salt
- ground black pepper
In a cast iron skill brown sausage add shortening, and flour.
Stir constantly until it begins to brown.
Slowly add heavy cream and half and half until fully mixed in.
Season with salt and pepper to taste.
Bring to boil, reduce heat to low and cook until it has thickened.

yum! Matt LOVES biscuits and gravy. I’ll definitely have to make this for him! Since my mind is all on freezer meals before Baby comes, I wonder if this would freeze well? I guess there is only one way to find out!
I love that the fat for the roux is bacon drippings – you just know it’s gonna be good! =)
I’m like you with biscuits and gravy. These look great!
