Have you heard of biscoff spread? If you haven’t you are missing out, but at the same time you might not want to know what it is. As once you start it’s hard to stop yourself.
It’s similar to Peanut Butter but made from a biscoff cookies. It is delicious. I was lucky enough to win a CASE from the company. Out of the 8 jars I shared 6 with friends and family. I kept 2 for myself. Other then on bagels and toast I knew I wanted to bake with it too.
These cookies, oh man they are SO good! Perfectly chewy and chocolatey and just all around awesome.
Biscoff Chocolate Chip Cookies (From: Kirbies Cravings)
- ½ cup unsalted butter, at room temperature
- ½ cup granulated sugar
- ½ cup packed light brown sugar
- ½ cup Biscoff spread
- 1 egg
- 1 tsp. vanilla
- 1 ½ cups flour
- 1 tsp. baking soda
- ¼ tsp. salt
- 1 cup chocolate chips
Preheat oven to 350F.
Cream butter with both sugars until light and fluffy. Mix in the egg, vanilla, and Biscoff.
In a separate bowl, mix the flour, baking soda, and salt. Then add into the wet mixture until just combined. Fold in the chocolate chips.
Drop the dough by large tablespoons onto baking sheet and bake for 6-8 minutes.
