I bought coconut oil about a year ago, it sat in my cupboard completely unopened until July when my daughter had sand flea bites and everything I read said coconut oil. I opened it and rubbed it up and down her legs for 2 days and that’s the extend of me touching it…. This weekend I wanted to make some banana bread so I searched for a recipe with coconut oil.
I was a little nervous, I wasn’t sure what to expect… would it taste like coconut? How would that mix with the banana. All my worries were quickly put aside when I tasted it. This was hands down the best banana bread I have ever had! It did not taste one bite like coconut but was much more flavorful and moist. Delicious all around. Now I am on the hunt for more recipe using coconut oil, whats your favorite way to use it?
Banana Bread (Adapted From: Kids Cooking)
- 3-4 very ripe bananas
- 1/3 cup virgin coconut oil
- 3/4 cup sugar
- 1 large egg
- 1 tsp. vanilla
- 1-3/4 flour
- 1-1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 cup mini chocolate chips
Preheat oven to 350 and grease a loaf pan with cookie spray.
Mash bananas pour into mixing bowl. Add coconut oil, and sugar. Beat until smooth. Add in egg and vanilla and mix until combined.
Mix in baking soda, cinnamon and flour until incorporated don’t over mix.
Stir in chocolate chips, pour into prepared loaf pan.
Bake for 50-55 minutes or until tooth pick comes out clean in the middle.
