Did you know last week on Thursday (Feb 23) was national banana bread day. After reading all the tweets I need some banana bread, and thankfully I always keep bananas on hand. When I have bananas going bad, I mash them up in packages of 3 or 4. I then put in a ziplock and freeze. When I need some I just thaw for an hour or so and add to recipe. **The bananas will turn black but that doesn’t affect texture.**
This was a simple recipe to whip up, and also delicious. But then again I have never found a banana bread recipe I don’t like.
Banana Bread (From: Simply Recipes)
- 3 or 4 ripe bananas, smashed
- 1/3 cup melted butter
- 1 cup sugar (can easily reduce to 3/4 cup)
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups of all-purpose flour
Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
