Chocolate Ice Cream with Mint Chips
Santa aka my dad stuffed Adam and I stocking FULL of candy this year. There was a handful of mint patties in there I am not really a mint person and Adam likes them but never thinks to eat them. So I decided to turn it into ice cream.
Not wanting to waste any more egg whites on ice cream I found this recipe on Delish and decided to give it a try. I didn’t have dark cocoa powder so just used cocoa, and halved the recipe based upon what I had for ingredients.
Chocolate Ice Cream (From: Delish)

- 1 c. Dutch processed Dark cocoa powder
- 2/3 c. granulated sugar
- 1/2 c. packed brown sugar
- 1 1/2 c. whole milk
- 3 1/4 c. heavy cream
- 1 tsp. pure vanilla extract
- mint patties cut into pieces
Place cocoa and sugars in a medium bowl; stir to combine. Add whole milk and whisk to combine until the cocoa and sugars are dissolved (about 2 minutes). Stir in heavy cream and vanilla. (Refrigerate if not using immediately).
Put mixture into ice cream maker per directions provided with your machine. After about 10-15 minute sadd mint chips to mix around. When the ice cream is very thick, but still soft. Transfer the ice cream to a covered container and place in the freezer until completely frozen.

My husband doesn’t usually like chocolate-based ice cream, but he loves those mint patty things so much that I think this would be a big hit! Thanks for posting.
