Pumpkin Chocolate Chip Pancakes

I have discovered something this fall, I actually like pumpkin. I have tasted pumpkin pie a few times and never liked it. And just assumed that since I didn’t like pumpkin pie I didn’t like pumpkin. But I have slowly realized I like things with pumpkin in them.

After going to I-hop yesterday and them having pumpkin pancakes but me opting for the regular pancakes, I decided I would make Adam and I some pumpkin pancakes for breakfast. I searched the web for an awesome recipe but nothing really jumped at me, so I kinda just went at it and gave it a try. These were awesome for a fall morning, or any morning. :)

Pumpkin Chocolate Chip Pancakes (From: Myself)

  • 1-2/3 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 1-3/4 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon ground allspice
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon nutmeg 
  • 1-1/4 cups milk
  • 3/4 cup  pumpkin puree
  • 1 egg
  • 1 tablespoon and 2 teaspoons vegetable oil
  • 2 teaspoons apple cidear vinegar
  • 1/4 cup chocolate chips

In abowl, mix together the milk, pumpkin, egg, oil and vinegar. In a seperate bowl combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and nutmeg, stir into the pumpkin mixture just enough to combine. Mix in chocolate chips.

Heat a lightly oiled griddle or frying pan over medium high heat. Use approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

    THIS IS BRILLIANT! I love pumpkin pancakes, but have never had chocolate chips in them.

    Very different mix of tastes with the pumpkin and chocolate chips. Well worth a try and one way to get the kids to eat pumpkin.

    I bet these were delicious. Pumpkin in a pancake would be really good.
